Deeply lobed toothed leaves in a flat ground-level rosette

Hollow stems and leaf midribs exude milky white latex when cut

Harvest Notes

Pick young leaves before flowering in spring for least bitterness. Flowers and roots also edible.

Uses

Leaves in salads or sautéed like spinach; flowers in wine or fritters; roots roasted as coffee substitute.

Use within 2 days. Blanch and freeze for longer storage.

Lookalikes

No dangerous lookalikes. Cat's ear (Hypochaeris radicata) and hawkweeds are all edible. The hollow stem with milky latex is definitive.
